Mommio: Cooking With Kids

Back by popular demand (thanks for reminding me we had stopped cooking Deanna!)- Cooking With Kids.  Today Avery, Marney, Max and Jack made the third delicious recipe from this book:
 Strawberry Shortcake
(makes six) 

Ingredients
2 cups flour
1/4 cup plus 2 Tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt
6 Tbsp. unsalted butter
3/4 cup heavy cream
2 cups strawberries
Cream Ingredients
1 cup heavy cream
1 Tbsp. sugar
1 tsp. vanilla extract

 Step 1: Preheat oven to 375.  Line a cookie sheet with parchment paper.
 Step 2: In a large bowl use a whisk to stir together the flour, 1/4  cup sugar, baking powder and salt until evenly blended.
 Step 3: Cut butter into small pieces and then cut them into the flour mixture.
Step 4: Add the cream and stir until the dough starts to come together.
Step 5: Sprinkle counter with flour.  Roll out dough to 1 inch thickness and use a biscuit cutter (or a cup like we did) to cut out six rounds.
Step 6: Bake for 18-20 minutes or until golden brown on tops. Let cool.
Step 7: While the rounds cool, cut the strawberries in thin slices and add the remaining sugar to the bowl of strawberries. Let stand for 10 minutes.
Step 8: Make the whipped cream by combining the heavy cream, sugar and vanilla and mixing with a blender on low for two minutes then on med-high for three minutes, or until soft peaks form.
Step 9: Assemble.  Cut the rounds in half.  Spoon strawberries onto bottom half, top with cream, place second half on top. Serve and enjoy!
