We have been getting so many yummy winter vegetables from our local CSA,
here's what we got just yesterday.
One of the things we have had a lot of lately are these big ugly pumpkins (or squash?).
We actually think these ugly pumpkins are pretty great just to look at, but we have been at a loss as to how to eat them. So after getting a little advice from a former chef (thanks Robin!) we took the plunge this week and cooked one. It was a fun experiment and it turned out delicious too! First, we cleaned it out-Then I stuffed it with a mixture I cooked up of brown rice, onions, mushrooms, lean ground beef, a little teriayki sauce and a cup of chicken broth.
Then we baked it, with the lid on, for about 1 1/2 hours until the pumpkin was fork tender.
After it was done we scooped out the stuffing, scraping the pumpkin into the mixture, and ate it. Wow- it was really great. Now that I have gotten over my fear of the ugly pumpkin we will try a few more ways soon.
