The three younger kids have started doing some fun cooking projects again while the older kids are at Joan's Academy on Mondays...and at the birthday boy's request (because the entire week is his birthday), today we are having a POPSICLE DAY!
Chocolate Pudding Mint Pops*
Chocolate Pudding Mint Pops*
1 (4 oz.) package instant chocolate pudding mix
1/2 cup sugar
3 cups vanilla almond milk
peppermint extract (to taste)
1. Combine the ingredients in a mixing bowl.
2. Pour mixture into small plastic cups, or ice pop molds, and place in the freezer.
3. When set (about 5-10 minutes) place a wooden popsicle stick in each one.
4. Serve frozen.
Strawberry Pops*
1/2 cup sugar

1/4 cup sugar
1/2 cup water
1. Puree all ingredients in a blender.

1/2 cup water
1/4 cup sugar
1/4 cup creamy peanut butter
1 cup vanilla almond milk
1. Bring water and sugar to a boil for about 2 minutes.
2. Remove from heat and stir in peanut butter, mix well and then add milk.
3. Cool for about 10-15 minutes.
4. Pour into small plastic cups.
5. Add wooden popsicle sticks.
6. Freeze until firm, remove from freezer a few minutes before eating.
Jello Rainbow Pops*
1 (3 oz.) boxes of Jello, assorted flavors/colors
1/2 cup sugar
1 cup boiling water
1 cup ice
1. Combine one flavor Jello with 1/2 cup sugar.
2. Pour 1 cup boiling water over mixture and stir until it is dissolved.
3. Stir in ice.
4. Pour first layer into molds or cups to desired height.
5. Freeze for 30 minutes or until firm.
6. Repeat for all desired layers.
7. When the last layer is poured, insert wooden popsicle sticks and freeze until completely set.
8. Serve frozen.

*We used vanilla almond milk in these recipes that call for milk so that Daddio can eat them, but you can use any kind of milk, cream or even coffee creamer. We also doubled and tripled some of these recipes. AND the kids were not really in to waiting for the pops to set before putting sticks in so we covered them with foil and stuck the sticks through the foil to keep them centered while they freeze.

Trey baked some frozen fish but then none of the kids ate it - because it was tortilla crusted tilapia instead of their fave frozen fish.
